Slow Cooker Swamp Potatoes

If comfort food had a secret hideout in the swamp (donโ€™t worry, no gators were harmed in the making of this recipe), it would definitely be these Slow Cooker Swamp Potatoes. Packed with tender baby potatoes, smoky andouille sausage, buttery goodness, savory green beans, and a magical packet of onion soup mix (because sometimes shortcuts taste the best).

This is one of those dump-and-go crock pot recipes that smells like you worked way harder than you actually did. Perfect as a hearty side dish or a full-on meal when youโ€™re feeling โ€œfeed me something cozy immediately.โ€

Slow Cooker Swamp Potatoes is that easy side dish or main meal that tastes like you worked way harder than you did.

  • Buttery, smoky, savory goodness in every bite
  • Feeds a crowd or makes fantastic leftovers
  • Works as a side dish OR a one-pot dinner
  • Basically impossible to mess up (my favorite kind of recipe)
Smoky andouille sausage, savory green beans, and tender potatoes in a buttery gravy of onion soup mix.

Making Slow Cooker Swamp Potatoes

Add the quartered potatoes to your crock pot.

Season with salt, pepper, garlic powder, and onion powder. Stir well to evenly coat.

Add in the diced onion, minced garlic, and sliced andouille sausage.

Spread the drained green beans evenly over the top.

Sprinkle the onion soup mix over everything.

Place the stick of butter right on top like the buttery crown it deserves.

Cover and cook on LOW for 6โ€“7 hours or HIGH for 3โ€“4 hours, until potatoes are fork tender.

Gently stir everything before serving to coat in that rich, buttery sauce.

Sausage, potatoes, and green beans gives a buttery, smoky, and savory vibe to this dish.

How to Customize These Swamp Potatoes

  • Make it spicy: Add red pepper flakes or a splash of hot sauce
  • Add protein: Toss in cooked chicken, shrimp (last 30 minutes), or crispy bacon
  • Veggie boost: Bell peppers, corn, or mushrooms work great
  • Extra cheesy: Sprinkle shredded cheddar or pepper jack before serving

Healthier Options (If Youโ€™re Feeling Responsible)

  • Use turkey andouille or smoked sausage
  • Cut butter in half (still delicious, just slightly less swampy)
  • Add extra green beans or other veggies for balance
