Easy BBQ Chicken Sliders

When I make chicken I intentionally make a lot so that I have a lot of leftover chicken. So what to do with it? Here’s a great recipe for those busy week nights when you want a delicious meal. Easy BBQ Chicken Sliders uses shredded chicken with your favorite BBQ sauce on a roll or bun. Using a small pint-sized slider bun makes it fun for pint-sized kids, too. Add some lettuce, tomato, and onion for a colorful scrumptious meal.

Shredded Chicken

Two big chicken breasts were cooked, but I only used half for this recipe. Read on for what I did with the other half. Just in case you don’t already have some leftover chicken, let’s cook these…first, they were browned in a dutch oven to give them some color. Actually, the first thing I did was spice them with some pepper and Lawry’s Season Salt, then I browned them. Next, add enough water that it comes up half way on the chicken and add half of a sliced onion to the water. Cover and bake in a preheated oven at 350 degrees for an hour. Cool the chicken enough that you can work with it, about 20 minutes, and begin shredding.

I don’t like to be too fussy when I’m shredding or chopping up chicken. If there is left over chicken breasts, legs, or thighs, just use 2 forks and it shreds easily. In the picture above, the chicken breast was roughly shredded, meaning some pieces are chunkier than others. No rhyme or reason to that, I probably just got lazy toward the end and the pieces got larger.

Some Assembly Required

While the chicken is being reheated in a sauce pan with some BBQ sauce added to it, the tomatoes and red onion can be sliced and the lettuce can be torn into slider-sized pieces.

Shortly before you remove the chicken, the slider buns can be warmed up in the microwave or throw them on top of the chicken in the sauce pan.

The buns don’t have to be heated, but if you did, imagine the bun is softer now with just a bit of melted butter on them. Mmm!

It’s all done in about 15 minutes and it goes great with my Mom’s Cucumber Noodle Salad, as seen in the pictures.This is making my hungry!

Easy BBQ Chicken Sliders are versatile and everyone loves them. Make them as appetizers or a main meal.

Even if you cook the chicken first with this recipe in mind, it’s still an easy meal that doesn’t require 30 ingredients.

Use your Grandma’s homemade BBQ sauce or buy a bottle off the shelf, it’s all good.

Materials

  • 3.5 cups shredded chicken, cooked
  • 1 cup BBQ sauce
  • 7 slider buns
  • 3 leaves iceberg lettuce, divided
  • 2 tomatoes, thinly sliced
  • 1/4 cup red onion, cut or chopped

Instructions

  • Using precooked (leftover) shredded chicken, heat the shredded chicken and BBQ sauce in a covered sauce pan, stirring often. 
  • Prepare your toppings, which are all optional. I used lettuce, tomatoes, and red onion. Other ideas are sliced pickles, crispy bacon, or your favorite sliced cheese. If you try an onion ring, let me know how it was.
  • Optional: Heat your slider buns in the microwave for about 10 seconds, or butter the insides and grill butter-side down, or you can steam them on top of your re-heated chicken in the pan during the last 30 seconds or so.
