Slow Cooker Beef Stroganoff is the ultimate comfort food that’s rich, creamy, and effortless. Made with tender stew meat, cream of mushroom soup, and cream cheese (yes, cream cheese instead of sour cream!), this cozy dish is perfect for busy weeknights, meal prep, or lazy Sundays.
Why cream cheese? It results in a richer, thicker, and more stable sauce as opposed to sour cream. You can, however, use the more tradition sour cream for that authentic, tangy flavor we all know and love. Both are great!

Making Slow Cooker Beef Stroganoff
Step 1: Sautรฉ the Aromatics and Beef (Optional but Recommended)
In a skillet on medium-high heat, sautรฉ the chopped onion and mushrooms until softened, then add the minced garlic for the last 30 seconds. Place this onion mixture in the bottom of the slow cooker. Next, add the beef to the hot skillet and sear both sides, then place over the onion mixture.
This step deepens the flavor, but you can skip it for convenience.
Step 2: Layer the Slow Cooker
Layer the slow cooker with the onions, mushrooms, and garlic on the bottom. Next add the beef.
Then, in a small bowl, mix together the soup, mustard, water (or beef stock), Worcestershire sauce, and seasonings. Pour over the beef and place a bay leaf on top.
Cover with the lid.
Step 3: Slow Cook
Set your timer on LOW for 7 โ 8 hours, or HIGH for 4 โ 5 hours, until the beef is fork-tender.
Step 4: Stir in Cream Cheese
Just before serving, remove the bay leaf. Right, because nobody wants a bite of that! Then, cut the cream cheese into cubes and stir it into the stroganoff. Let it melt and blend into the sauce, stirring occasionally for a silky, rich texture.

Ingredients
- 1/2 cup onion, chopped
- 5 oz. mushrooms, sliced
- 2 cloves garlic, minced
- 1 – 1 1/2 lb. lean stew meat, cubed
- 10.5 oz. can cream of mushroom soup (or golden mushroom soup)
- 1 Tbsp. Dijon mustard
- 1/4 cup water (or beef stock)
- 1 Tbsp. Worcestershire sauce
- 1 tsp. each onion powder, dried thyme, dried parsley
- 1 bay leaf
- 4 oz. cream cheese, softened and cubed
Instructions
- Optional, but recommended: sautรฉ the aromatics and beef: In hot pan, sautรฉ onions and mushrooms until softened. Add minced garlic for last 30 seconds. Place in the bottom of the slow cooker. Add the beef to the hot pan: sear for a few minutes, then turn over for another few minutes to give it color. Add to the slow cooker.
- Layer the slow cooker: Onions, mushrooms, and garlic on the bottom. Place beef over onion mixture.
- In small bowl, mix together the soup, mustard, water, Worcestershire, and seasonings. Pour over beef. Place bay leaf on top. Cover with lid.
- Set slow cooker on LOW (preferred method) for 7 – 8 hours, or on HIGH for 4 – 5 hours. Beef should be fork tender. Just before serving, remove the bay leaf and stir in cream cheese. Enjoy!
