Asiago Banana Bread Bites

Use fun shapes that fit your style for the lightly grilled banana bread, then top that with Asiago cheese and a toasted pecan half. Delicious, and definitely not your typical appetizer.

These Asiago Banana Bread Bites are, I have to warn you, so good you won’t know whether to eat them as an appetizer or as dessert.

The sweetness of the banana bread lightly grilled in butter is heavenly.

Asiago cheese, which is a little different than Parmesan cheese in that it’s nuttier, slightly creamier.

To further compliment the cheese, a toasted pecan is placed on top of each Bite. Toasting the pecans is pretty simple, plus it really brings out the delicious flavor of the nut. In other words, this is an easy step you don’t want to overlook.

Making Asiago Banana Bread Bites

If the pecans aren’t toasted, let’s do that first.

Really easy, just place them in a skillet on medium heat for about 5 minutes, stirring often. Then, set them on a plate to cool.

No oil or butter is needed, just the pan and the nuts. Life should be so easy.

You’ll need a cookie or biscuit cutter for the next step, although you could cut them into shapes with a sharp knife. Squares or triangles maybe? I used a heart shape and a circle, both of which were approx. 1.5 – 2″ across. You know, the size of an appetizer. 

Next, melt the butter in the skillet and add the cut-outs. Grill each side to a light golden brown, just enough to give it a little crunch.

Remove them from the pan to a microwavable plate.

Add a teaspoon or so of Asiago cheese to each cut-out, then  a toasted pecan. Microwave for about 10 seconds just to melt the cheese a little. Serve immediately.

Melting the cheese helps it all stick together, especially if you bite one in half, like I do. My friend, on the other hand, just shoved them whole into his face. Gone. Just gone. I wasn’t even sure if he had time to taste them or not.

One other thought, if you prefer to use block cheese, instead of shredded, slice the cheese on the thin side, and I would still microwave them.

Asiago Banana Bread Bites

Ingredients

  • 12 1 1/2 to 2" rounds cut from thinly sliced banana bread
  • 1 Tbsp. butter
  • 12 tsp. Asiago cheese, shredded or thin slices
  • 12 toasted pecan halves

Instructions

  • Using a cookie cutter, cut 12 rounds from thinly sliced banana bread.
  • Melt butter in skillet. Lightly brown both sides of rounds in melted butter.
  • Top each round with 1 teaspoon cheese and 1 toasted pecan half.
  • Microwave for approx. 10 seconds to melt cheese. Serve warm and enjoy.

Notes

To toast pecans, place in skillet for approx. 5 minutes, stirring often. No oil or butter is needed. The heat brings out the flavor.
