Crunchy BBQ Chicken Nuggets
Eat these Crunchy BBQ Chicken Nuggets as an appetizer or an entree, but definitely eat them. An easy recipe that was inspired by my BBQ Onion Chicken Bake only I made the chicken pieces smaller. The BBQ sauce/mayo coating under the fried onions keeps the chicken moist as they bake while the outside gets nice and golden-brown crispy.
Ok, let’s do this…
Foil line a shallow baking pan and spray with cooking spray. Have your chicken breasts cut up into 2-inch cubes and salt and pepper them. Next, in a medium sized bowl, mix your mayo with the BBQ sauce and roll the chicken pieces in the sauce mixture to evenly coat. Lastly, chop the fried onions into smaller pieces, so that they stick to the chicken better. Now roll your chicken pieces in the fried onions and place on the baking sheet.
That’s about it. They don’t have to bake too long at 400° because they’re cut so small, so you only need to bake them about 18-20 minutes. The mayo/BBQ sauce coating keeps them moist in the middle and the fried onions get nice and toasty on the outside. Easy and delicious!
You might want to consider using a large toothpick if you serve them as appetizers/tapas. I ate about 1/3 of mine off the baking tray and almost didn’t have enough to take my pictures. LOL I should never blog when I’m hungry.
Crunchy BBQ Chicken Nuggets don’t really need a dipping sauce, but ohhhhh, if you love dipping like I do, try ranch and more BBQ sauce. I dip into both for maximum flavor. Mmm!

Crunchy BBQ Chicken Nuggets
Ingredients
- 2 chicken breasts, cubed into approx. 2" pieces
- salt and pepper to taste
- 1/4 cup BBQ sauce
- 1/4 cup mayonnaise
- 1 1/2 cups crispy fried onions, chopped
Instructions
- Preheat oven to 400°. Spray foil-lined baking dish and set aside.
- Salt and pepper cubed chicken pieces.
- In medium bowl, mix mayo with BBQ sauce. Roll chicken in sauce to evenly coat.
- Chop the fried onions into smaller pieces (to stick to the chicken better). Roll chicken in fried onions and place on baking sheet.
- Bake for 18-20 minutes. Enjoy!
