Filled Croissants Breakfast Casserole has all you need to start your day right. Buttery croissants filled with a chive and onion cream cheese surrounded by diced jalapeños and ham with eggs. Topped with Pepper Jack Cheese, this dish is super tasty and completely delicious.

Filled Croissants Breakfast Casserole has delicious, bold flavors of jalapeños, pepper jack cheese, and cream cheese in this egg-based breakfast.

This recipe is easy and fun to make. The results? …a hearty, delicious breakfast or beautiful addition to your brunch table.

Don’t tell anyone, but I eat the leftovers for lunch and dinner, too.

Diced jalapeños and chopped ham float in the egg base that smothers cream cheese stuffed croissants.

Making Filled Croissants Breakfast Casserole

Preheat the oven to 375° and grease your 9 x 9″ baking dish. Spoiler alert: I tell you how to make a larger portion in a 13 x 9″ dish below.

Unroll your tube of Pillsbury Crescents on a flat surface, then separate the triangles.

Divvy up the Chives & Onion cream cheese among the 8 triangles and spread from corner to corner to corner…it is a triangle, after all. Each dollop is about a heaping teaspoon before you spread it, but use the whole container.

Then, roll up the triangles. Start from the short end and roll so the point ends up on top. See pictures.

Filled Croissants Breakfast Casserole are fun and easy to make, hot and ready in an hour.

Once filled and rolled, place the croissants evenly in the baking dish and sprinkle some thyme on top.

Next, chop your ham up and dice the jalapeño, then sprinkle both around the croissants.

In a medium bowl, mix the eggs and milk together. Add salt and pepper to taste, then pour into the baking dish.

Lastly, sprinkle a cup of Pepper Jack Cheese over the top, then bake for 35 – 40 minutes. The top will be golden brown and a knife inserted into the egg mixture should come out clean. If there’s still runny egg on the knife, bake it some more.

Optionally, garnish with some chopped, fresh parsley and dig in.

So good, mmm mmm tasty!

Filled Croissants Breakfast Casserole is a hearty meal and a beautiful addition to any brunch table.

Alternatives or Substitutes

  • Chive & Onion Cream Cheese — use any flavor you love. There’s also Garden Vegetable, Original, and others.
  • Chopped Ham — not a fan? Leave it out or use cooked bacon or cooked sausage instead.
  • Jalapeño — too hot? Use diced bell pepper; yellow for sweet, green for more of a bite.
  • Pepper Jack Cheese — use anything that’s already in your fridge you love. Pepper Jack has jalapeño in it for extra spice and flavor, but it’s got nothing over cheddar.
  • Dried Thyme — more of a garlic lover? By all means, swap out or just add the garlic powder right in.
  • Give me more! Making it in a 13 x 9″ dish — buy 2 Pillsbury Crescent tubes and double most everything (cream cheese, ham, jalapeños). For the eggs, you’ll need 6, and about 3/4 cup milk. Going from a 9 x 9″ to a 13 x 9″ isn’t doubling it, it’s just making more of a good thing.

Ingredients

  • 1 tube Pillsbury Crescents, (8 rolls)
  • 7.5 oz. tub Philadelphia Chives & Onion Cream Cheese
  • 1/2 tsp. dried thyme
  • 4 oz. ham, chopped
  • 1 jalapeño, diced
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 cup pepper jack cheese
  • optional garnish: chopped fresh parsley

Instructions

  • Preheat oven to 375° and grease a 9 x 9" baking dish.
  • Unroll the Pillsbury Crescents and separate the triangles. Divide the cream cheese among the triangles and spread from corner to corner. Roll each triangle up and place in prepared baking dish. Season tops of each croissant with thyme.
  • Sprinkle ham and jalapeño over dish.
  • In medium bowl, mix eggs, milk, salt, and pepper. Pour into baking dish. Sprinkle cheese evenly over top.
  • Bake uncovered for 35 – 40 minutes, or until a knife inserted into the egg mixture comes out clean.
  • Optional: garnish top with chopped, fresh parsley. Enjoy!
