Creamy Cilantro Dressing
This Creamy Cilantro Dressing is perfect on salads, in tacos, or as a dipping sauce. The cilantro, lime juice, and avocado bring bold delicious flavors with an olive oil and honey base. Easy to make using fresh garden veggies.
Make your own delicious dressing from scratch using fresh ingredients.
This kind of dressing is a pleasure to serve, plus it’s obviously homemade.
Customize the dressing with your favorite seasoning, or add more or less lime juice to fit your preference.
Making Creamy Cilantro Dressing
First, decide how you are going to blend the dressing. In other words, are you using a traditional blender, or maybe an immersion blender?
I found the immersion blender worked better for this recipe, because the recipe makes a small portion: about 2/3 cup.
I’ve used the traditional blender, but I find it’s too big for the little amount that goes into it.
A small food processor would work, too.
For the immersion blender, grab yourself a large coffee mug or small bowl where the inside is flat.
This way the immersion blender can reach the bottom.
So, this recipe is really easy, but I want to share some tips along the way.
Basically, you dump everything into the bowl and blend it.
First, however, you have to tear the cilantro leaves off the stems.
Helpful hint: make sure the cilantro and your fingers are dry.
If you try to tear off the leaves when they’re wet, they’ll stick to your fingers and it’ll make you batty.
Moving onto the avocado. It will blend up much better, smoother if the avocado is ripe.
Ripe avocados taste better anyway. If you don’t have an avocado, you can substitute with 1/2 cup plain yogurt.
Love that fresh lime juice, but if you haven’t got any limes, you can use the bottled.
Also, and this is depending on what you serve the dressing with or on, you can substitute with lemon juice.
This dressing would be amazing as a dipping sauce for some cooked shrimp.
Lemon or lime would work, you may even want to add a bit more.
The recipe calls for white wine vinegar, but if you’re fresh out, there are substitutes.
In place of, you could use rice vinegar or apple cider vinegar.
What to serve this with.
As a dressing, I put this Creamy Cilantro Dressing on my Southwest Chicken Salad, and sometimes to brighten up a plain garden salad.
Definitely try this in your tacos. It’s so scrumptious in my Shredded Chicken Tacos and shrimp tacos.
Add a dollop on top of a tostada, inside a burrito, or with some Chicken Fajita Foil Packets.
Use it as a dipping sauce for tortilla chips, cooked shrimp, or any number of other things I can’t think of right now.
Serve it on a veggie platter or with some Baked Chicken Taquitos. So good! Love me some taquitos.
If you serve it with something else, let me know, ok? I feed off your ideas…pun intended.
