Making Hot Cheesy Corn Dip
Oh man, this is so easy.
Firstly, dump all the ingredients into a medium sauce pan over medium heat. I started the spices off mild, but feel free to use a heavy hand if you want to heat things up.
Secondly, as it heats up, break up the cream cheese, because it will help it melt faster.
Stirring often, keep cooking until it gets bubbly. This actually only takes a few minutes, so don’t run off to wash your car.
Thirdly, once it’s bubbly, it’s done.
Lastly, serve it in a pretty dish or grab a cast iron skillet, which helps to keep it warm.

- Add protein: Stir in cooked bacon, chorizo, or shredded chicken for a heartier dip.

Hot Cheesy Corn Dip
Ingredients
- 8 oz. pkg. cream cheese
- 15.25 oz. can yellow corn, drained
- 15.25 oz. can white corn, drained
- 10 oz. can Rotel
- 1/2 cup cheddar cheese, shredded
- 1/4 cup sour cream
- 1/4 tsp. EACH: chili powder, garlic powder, cumin, salt and pepper Add more per preference
Instructions
- In medium sauce pan, combine all ingredients. Stir together over medium heat until bubbly.
- Serve as a dip with chips, or pour over the top of a plate of tortilla chips as nachos. Enjoy!
