Making Hot Cheesy Corn Dip

Oh man, this is so easy.

Firstly, dump all the ingredients into a medium sauce pan over medium heat. I started the spices off mild, but feel free to use a heavy hand if you want to heat things up.

Secondly, as it heats up, break up the cream cheese, because it will help it melt faster.

Stirring often, keep cooking until it gets bubbly. This actually only takes a few minutes, so don’t run off to wash your car.

Thirdly, once it’s bubbly, it’s done.

Lastly, serve it in a pretty dish or grab a cast iron skillet, which helps to keep it warm.

Hot Cheesy Corn Dip is super quick and easy to make on the stovetop.

Customization Ideas

  • Add protein: Stir in cooked bacon, chorizo, or shredded chicken for a heartier dip.
  • Make it spicier: Add diced jalapeรฑos or a splash of hot sauce.
  • Swap the cheese: Try pepper jack, Monterey Jack, or a Mexican blend for different flavor profiles.
  • Add veggies: Chop up some bell peppers or green onion for a splash of color and flavor.
  • Throw in a small can of diced green chiles, because they’re scrumptious little things.

Storage Tips

Have leftovers? (Unlikely!) Store your corn dip in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, stirring occasionally until warmed through.

Diced tomatoes with kernels, cream cheese, sour cream, and some delicious seasonings make up this appetizer.
